This sauteed okra so simple, we cooked it tonight after work. For this dish, you only need a bit of oil, sliced onion or garlic, tomatoes, a bit of lemon juice and okra. The okra comes out moist and tender. The golden onion or garlic adds a perfect hint of sweetness that brings out the sweetness of okra too.
Another useful tip is to wash the okra pods and dry them thoroughly. Cut off the stem ends from the okra pods. If you cut the tip then you will loose the healthy benefits of okra contained in its juice. We peel the tip by going round with a knife like a pencil sharpener around its top to get rid off the sharp skin and keep its juice in.

Heat the olive oil in a large heavy non-stick over medium heat. When the oil is hot and shimmering, add okra and stir-fry for 5 minutes, stirring and turning frequently to keep it from sticking. Add sliced tomatoes, onions, salt and lemon juice. Sautee over low heat ( slow cooking ) until okra is softened and light in colour.

When choosing fresh okra, look for bright green pods no longer than 4 santimetres. They should be firm and free from blemishes and damage.
